- 2 bay leaves
- 4 slices sourdough bread
- 1 cup Gruyère cheese, shredded
- 2 tbsp unsalted butter
- Salt and pepper to taste
Instructions
- Melt the butter in a large pot over medium heat.
- Add the sliced onions, cooking for about 30 minutes until golden brown, stirring occasionally.
- Once the onions are caramelized, push them to one side of the pot, add the beef short ribs, and sear until browned on all sides (about 5 to 7 minutes).
- Pour in the beef broth, thyme, and bay leaves; bring to a gentle boil.
- Reduce heat and let the soup simmer uncovered for about 2 hours.
- Preheat your oven to 350°F (175°C).
- Ladle the soup into oven-safe bowls, top with sourdough bread and Gruyère cheese.
- Bake for 15 to 20 minutes until bubbly and golden brown.
