  • 2 tsp fresh thyme leaves
  • 2 bay leaves
  • 4 slices sourdough bread
  • 1 cup Gruyère cheese, shredded
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. Melt the butter in a large pot over medium heat.
  2. Add the sliced onions, cooking for about 30 minutes until golden brown, stirring occasionally.
  3. Once the onions are caramelized, push them to one side of the pot, add the beef short ribs, and sear until browned on all sides (about 5 to 7 minutes).
  4. Pour in the beef broth, thyme, and bay leaves; bring to a gentle boil.
  5. Reduce heat and let the soup simmer uncovered for about 2 hours.
  6. Preheat your oven to 350°F (175°C).
  7. Ladle the soup into oven-safe bowls, top with sourdough bread and Gruyère cheese.
  8. Bake for 15 to 20 minutes until bubbly and golden brown.
