- 2 lbs beef chuck, cut into cubes
- 2 large onions, sliced
- 4 cloves garlic, minced
- 4 cups beef broth
- 2 tbsp Worcestershire sauce
- 2 tsp thyme
- 2 bay leaves
- Salt and pepper to taste
- 2 tbsp olive oil
- 1 cup Gruyère cheese, grated (optional)
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 10-15 minutes.
- Add the minced garlic and cook for another 1-2 minutes.
- Increase the heat to high and add the beef cubes, browning them on all sides.
- Stir in the broth, Worcestershire sauce, thyme, bay leaves, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and let simmer for about 90-120 minutes or until the beef is tender.
- If using, sprinkle the Gruyère cheese on top and let it melt before serving.
- Garnish with fresh parsley and serve hot.
Notes
For extra sweetness, consider adding a tablespoon of sugar during the onion caramelization process.
