Description

A hearty and comforting French Onion Beef Stew with tender beef and caramelized onions, perfect for chilly evenings.


Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 2 tsp thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1 cup Gruyère cheese, grated (optional)
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the sliced onions and cook until caramelized, about 10-15 minutes.
  2. Add the minced garlic and cook for another 1-2 minutes.
  3. Increase the heat to high and add the beef cubes, browning them on all sides.
  4. Stir in the broth, Worcestershire sauce, thyme, bay leaves, salt, and pepper. Bring to a boil.
  5. Reduce heat to low, cover, and let simmer for about 90-120 minutes or until the beef is tender.
  6. If using, sprinkle the Gruyère cheese on top and let it melt before serving.
  7. Garnish with fresh parsley and serve hot.

Notes

For extra sweetness, consider adding a tablespoon of sugar during the onion caramelization process.
