Description

A comforting bowl of corn chowder that celebrates the natural sweetness of fresh corn, enhanced by bacon, potatoes, and heavy cream.

Ingredients

  • Fresh corn kernels
  • Bacon
  • Potatoes
  • Onion
  • Garlic
  • Chicken or vegetable broth
  • Heavy cream
  • Salt
  • Pepper
  • Chives or green onions for garnish

Instructions

  1. In a large pot, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add diced onion and garlic to the pot and sauté until softened.
  3. Add diced potatoes and broth; bring to a boil.
  4. Reduce heat and simmer until potatoes are tender.
  5. Stir in corn and heavy cream; cook until heated through.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with chives or green onions and crumbled bacon.

Notes

For a thicker consistency, blend a portion of the chowder. Let the chowder rest for a few minutes after cooking to enhance flavors.
