- 2 medium spaghetti squash
- 2 tablespoons olive oil (30 ml)
- 1 teaspoon salt (5 g)
- 1/2 teaspoon black pepper (1 g)
- 3 cups fresh spinach (90 g)
- 2 cloves garlic, minced
- 1 cup ricotta cheese (250 g)
- 1 cup shredded mozzarella cheese (100 g)
- 1/2 cup grated plant-based cheese (50 g)
- 1 teaspoon dried oregano (1 g)
- 1 teaspoon dried basil (1 g)
- 1/2 teaspoon red pepper flakes (optional) (1 g)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and remove the seeds.
- Drizzle olive oil over the squash halves and season with salt and black pepper.
- Place the squash cut side down on a baking sheet.
- Roast in the oven for 35-40 minutes, until the flesh is tender.
- While the squash is roasting, heat a pan over medium heat.
- Add a little olive oil, then sauté the minced garlic for 1 minute.
- Add the fresh spinach to the pan and cook until wilted.
- Remove the pan from heat and set the spinach aside.
- Once the squash is roasted, use a fork to scrape out the flesh into strands.
- In a large bowl, combine the spaghetti squash strands with ricotta cheese.
- Add the sautéed spinach, shredded mozzarella, and half of the Parmesan cheese.
- Season the mixture with oregano, basil, and red pepper flakes.
- Mix everything well to evenly distribute the ingredients.
- Transfer the mixture into a baking dish.
- Sprinkle the remaining Parmesan cheese on top.
- Bake in the oven for 15-20 minutes, until the top is golden and bubbly.
- Let the bake cool for a few minutes before serving.
