  • 2 medium spaghetti squash
  • 2 tablespoons olive oil (30 ml)
  • 1 teaspoon salt (5 g)
  • 1/2 teaspoon black pepper (1 g)
  • 3 cups fresh spinach (90 g)
  • 2 cloves garlic, minced
  • 1 cup ricotta cheese (250 g)
  • 1 cup shredded mozzarella cheese (100 g)
  • 1/2 cup grated plant-based cheese (50 g)
  • 1 teaspoon dried oregano (1 g)
  • 1 teaspoon dried basil (1 g)
  • 1/2 teaspoon red pepper flakes (optional) (1 g)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and remove the seeds.
  3. Drizzle olive oil over the squash halves and season with salt and black pepper.
  4. Place the squash cut side down on a baking sheet.
  5. Roast in the oven for 35-40 minutes, until the flesh is tender.
  6. While the squash is roasting, heat a pan over medium heat.
  7. Add a little olive oil, then sauté the minced garlic for 1 minute.
  8. Add the fresh spinach to the pan and cook until wilted.
  9. Remove the pan from heat and set the spinach aside.
  10. Once the squash is roasted, use a fork to scrape out the flesh into strands.
  11. In a large bowl, combine the spaghetti squash strands with ricotta cheese.
  12. Add the sautéed spinach, shredded mozzarella, and half of the Parmesan cheese.
  13. Season the mixture with oregano, basil, and red pepper flakes.
  14. Mix everything well to evenly distribute the ingredients.
  15. Transfer the mixture into a baking dish.
  16. Sprinkle the remaining Parmesan cheese on top.
  17. Bake in the oven for 15-20 minutes, until the top is golden and bubbly.
  18. Let the bake cool for a few minutes before serving.
