Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the sliced mushrooms and cook for 5-7 minutes until browned.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Add the orzo pasta to the skillet and toast for 1-2 minutes.
- Pour in the vegetable broth and bring to a simmer.
- Cook the orzo, stirring occasionally, for 8-10 minutes until tender.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Add the butter, Parmesan cheese, lemon juice, salt, and pepper.
- Stir well to combine all the ingredients and melt the cheese.
- Adjust seasoning with more salt and pepper if needed.
