  • 2 pounds (900 g) beef steak (New York strip or ribeye will work too), cut into 1-inch cubes
  • 1/2 teaspoon (3 ml) red pepper flakes
  • 3 tablespoons (45 ml) vegetable oil
  • 6 tablespoons (85 g) unsalted butter
  • 8 cloves garlic, minced
  • 12 ounces (340 g) fresh green beans, ends trimmed
  • 1 tablespoon (15 ml) chopped parsley, plus more for garnish
  • salt and pepper, to taste

Instructions

  1. Sprinkle the beef cubes with salt, pepper, and red pepper flakes for seasoning.
  2. Warm a large pan on medium-high heat until it’s very hot before adding the oil.
  3. Pour vegetable oil into the pan and add the beef. Ensure the pieces aren’t touching or overlapping to get a nice sear. You might need to do this in two rounds. Sear each side for a minute, then remove them to a plate.
  4. Wipe the pan clean before preparing the green beans.
  5. Turn the heat to medium and let the butter melt in the same pan.
  6. Introduce the garlic, green beans, parsley, salt, pepper, and a bit of water. Cover the pan and let them steam for 5-6 minutes. Uncover, stir the green beans, and let the water evaporate completely. Move them to a plate, keeping the garlic in the pan.
  7. Return the beef and its juices to the pan. Mix the beef to coat it in the garlic butter. Push the beef to one side of the pan and place the green beans next to them.
  8. Drizzle the garlic butter over. Add more salt and pepper if necessary. Sprinkle extra parsley on top before serving.

  • Marinate beef cubes in seasoning for at least 30 minutes for a more robust flavor.
  • Trim green beans ends for even cooking and a polished presentation.
  • Avoid overcrowding the pan to achieve a golden crust on all sides of the beef cubes.
