Ingredients

- 2 medium zucchinis, sliced
- 4 cloves garlic, minced
- 4 tbsp unsalted butter
- 2 tbsp extra virgin olive oil
- ½ tsp salt
- ¼ tsp freshly ground black pepper
- 1 tbsp fresh lemon juice
Instructions
- Wash and slice zucchinis into thick rounds or half-moons for even cooking.
- In a small saucepan over low heat, melt the unsalted butter.
- Add minced garlic and simmer until fragrant.
- In a large bowl, combine zucchini slices with olive oil, salt, pepper, and garlic butter until well coated.
- Thread the zucchini onto skewers (soak wooden skewers in water first).
- Preheat the grill to medium-high (about 400°F).
- Grill skewers for 8-10 minutes, turning occasionally until tender with char marks.
- Drizzle fresh lemon juice over skewers before serving hot.
Notes
Consider adding bell peppers or cherry tomatoes for variety. Soak wooden skewers in water to prevent burning.
