A delicious alternative to pasta, this Garlic Chicken Spaghetti Squash is filled with tender shredded chicken, roasted garlic, and Italian seasoning, perfect for a cozy dinner.


Ingredients

  • 1 medium spaghetti squash
  • 2 cups cooked chicken, shredded
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the spaghetti squash in half lengthwise and remove the seeds.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Place cut-side down on a baking sheet and roast for 40-45 minutes until tender.
  5. While the squash is roasting, heat olive oil in a pan over medium heat.
  6. Add minced garlic and sauté for 1-2 minutes until fragrant.
  7. Stir in the cooked shredded chicken and Italian seasoning, heating through.
  8. Once the spaghetti squash is done, use a fork to scrape out the strands into a bowl.
  9. Combine the spaghetti squash strands with the chicken mixture and toss to combine.
  10. Top with grated Parmesan cheese and garnish with fresh parsley before serving.

Notes

For added spice, consider adding red pepper flakes to the garlic sauté.
