- 1 medium spaghetti squash
- 2 cups cooked chicken, shredded
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1/4 cup grated Parmesan cheese
- Fresh parsley, for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the spaghetti squash in half lengthwise and remove the seeds.
- Drizzle with olive oil and season with salt and pepper.
- Place cut-side down on a baking sheet and roast for 40-45 minutes until tender.
- While the squash is roasting, heat olive oil in a pan over medium heat.
- Add minced garlic and sauté for 1-2 minutes until fragrant.
- Stir in the cooked shredded chicken and Italian seasoning, heating through.
- Once the spaghetti squash is done, use a fork to scrape out the strands into a bowl.
- Combine the spaghetti squash strands with the chicken mixture and toss to combine.
- Top with grated Parmesan cheese and garnish with fresh parsley before serving.
Notes
For added spice, consider adding red pepper flakes to the garlic sauté.
