Ingredients

- 2 cans of chickpeas, drained and rinsed
- 4 cups of vegetable broth
- 4 cloves of garlic, minced
- 1 onion, chopped
- 2 carrots, chopped
- 2 tablespoons of olive oil
- 1 teaspoon of cumin
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and carrots, and sauté until the onion is translucent.
- Stir in the minced garlic and cumin, cooking for another minute until fragrant.
- Add the chickpeas and vegetable broth to the pot, and bring to a simmer.
- Let it cook for about 15-20 minutes to allow the flavors to meld.
- Use an immersion blender to partially blend the soup for a creamier texture, if desired, or leave it as is for a chunkier soup.
- Season with salt and pepper to taste, and serve hot, garnished with fresh parsley if using.
