Ingredients

  • 2 cans of chickpeas, drained and rinsed
  • 4 cups of vegetable broth
  • 4 cloves of garlic, minced
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 tablespoons of olive oil
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and carrots, and sauté until the onion is translucent.
  2. Stir in the minced garlic and cumin, cooking for another minute until fragrant.
  3. Add the chickpeas and vegetable broth to the pot, and bring to a simmer.
  4. Let it cook for about 15-20 minutes to allow the flavors to meld.
  5. Use an immersion blender to partially blend the soup for a creamier texture, if desired, or leave it as is for a chunkier soup.
  6. Season with salt and pepper to taste, and serve hot, garnished with fresh parsley if using.
