- 1.5 pounds red potatoes
- 4 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon dried herbs (such as rosemary, thyme, or oregano)
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and cut the red potatoes into quarters.
- In a large bowl, combine the potatoes with minced garlic, olive oil, dried herbs, salt, and pepper. Toss until the potatoes are well coated.
- Spread the potatoes in a single layer on a baking sheet.
- Sprinkle the grated Parmesan cheese over the top.
- Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and tender, stirring halfway through.
- Remove from the oven and serve warm.
Notes
For extra cheese, sprinkle additional Parmesan during the last few minutes of baking for a crispy top layer.
