- 4 boneless, skinless chicken breasts
- 1.5 pounds baby Yukon Gold or red potatoes
- 4 cloves garlic
- ⅓ cup grated Parmesan cheese
- Olive oil
- 1 teaspoon Italian seasoning
- ½ teaspoon smoked paprika
- ½ teaspoon salt
- ¼ teaspoon black pepper
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- Pat the chicken dry and brush with olive oil. Season generously with Italian seasoning, smoked paprika, salt, and black pepper.
- Halve the baby Yukon Gold or red potatoes and place them in a bowl. Toss them with more olive oil, minced garlic, Parmesan cheese, salt, and pepper.
- Arrange the seasoned chicken on one half of the baking sheet and spread the garlic Parmesan potatoes on the other half.
- Roast everything in the oven for 25-30 minutes, ensuring the chicken reaches an internal temperature of 165°F (74°C) and the potatoes turn crispy.
- Broil for an additional 5 minutes if you desire additional crispiness.
- Garnish with fresh parsley before serving.
