  • 1.5 pounds baby Yukon Gold or red potatoes
  • 4 cloves garlic
  • ⅓ cup grated Parmesan cheese
  • Olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  2. Pat the chicken dry and brush with olive oil. Season generously with Italian seasoning, smoked paprika, salt, and black pepper.
  3. Halve the baby Yukon Gold or red potatoes and place them in a bowl. Toss them with more olive oil, minced garlic, Parmesan cheese, salt, and pepper.
  4. Arrange the seasoned chicken on one half of the baking sheet and spread the garlic Parmesan potatoes on the other half.
  5. Roast everything in the oven for 25-30 minutes, ensuring the chicken reaches an internal temperature of 165°F (74°C) and the potatoes turn crispy.
  6. Broil for an additional 5 minutes if you desire additional crispiness.
  7. Garnish with fresh parsley before serving.
