Ingredients

  • Rainbow Carrots: 2 lbs (about 2 bunches), preferably organic
  • Olive Oil: 3-4 tablespoons (extra virgin recommended)
  • Garlic: 4-6 cloves, minced
  • Sea Salt: 1 teaspoon (or to taste)
  • Black Pepper: ½ teaspoon (or to taste)
  • Optional Fresh Herbs: 1-2 tablespoons chopped fresh parsley, thyme, or rosemary

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a large, rimmed baking sheet with parchment paper or lightly grease it with olive oil.
  3. Wash the rainbow carrots under cold running water and scrub gently to remove dirt. Trim off the green tops and the tips of the roots.
  4. Depending on the size of the carrots, leave smaller ones whole. Slice medium ones in half lengthwise and quarter larger, thicker ones.
  5. Mince the garlic cloves finely.
  6. Place the prepared carrots onto the baking sheet. Drizzle generously with olive oil and sprinkle with minced garlic, sea salt, and black pepper. Add any fresh herbs if using.
  7. Using your hands or tongs, toss the carrots until evenly coated.
  8. Spread the carrots in a single layer on the baking sheet and avoid overcrowding.
  9. Roast in the preheated oven for 20-35 minutes, depending on the thickness of the carrots, until tender.
  10. Check for doneness after 15-20 minutes. Toss gently to promote even browning.
  11. Once done, remove from the oven and sprinkle with fresh parsley or a squeeze of lemon juice if desired.
