Description

Delightful gluten-free Mexican wedding cookies with nutty flavors and a melt-in-your-mouth texture, perfect for any occasion.


Ingredients

  • 1 ½ cups all-purpose gluten free flour blend
  • ¾ teaspoon xanthan gum
  • 5/8 cup cornstarch
  • 1 cup confectioners’ sugar, divided, plus more as needed
  • ¼ teaspoon kosher salt
  • 13 tablespoons finely chopped raw pecans (or walnuts or almonds)
  • 16 tablespoons unsalted butter, at cool room temperature
  • 2 teaspoons pure vanilla extract
  • Lukewarm water, by the teaspoonful as necessary
  • 1/3 cup granulated sugar, for rolling

Instructions

  1. In a large bowl, combine the gluten free flour, xanthan gum, cornstarch, 2/3 cup of confectioners’ sugar, and kosher salt.
  2. Whisk these dry ingredients together until well combined.
  3. Add the finely chopped nuts and whisk again.
  4. Chop the butter into approximately 1 tablespoon chunks and scatter them over the dry ingredients.
  5. Add the vanilla extract to the mix.
  6. Incorporate everything until well combined.
  7. Begin adding lukewarm water by the teaspoonful, mixing well after each addition.
  8. Scoop the dough using a heaping tablespoon and gently roll each piece into a round shape.
  9. Coat each ball of cookie dough in granulated sugar by shaking it back and forth.
  10. Arrange the shaped dough balls on a flat surface and refrigerate for about ten minutes.
  11. Preheat your oven to 375°F.
  12. Toss the chilled balls of dough in the remaining 1/3 cup of confectioners’ sugar until evenly coated.
  13. Place each coated ball on the prepared baking sheet, spacing them about 1 ½ inches apart.
  14. Bake in the center of the oven for about 12 minutes, or until set and firm to the touch.
  15. Remove the baking sheet and allow the cookies to cool completely.
  16. Toss them again in confectioners’ sugar to achieve that characteristic snowball appearance.

Notes

Chill the dough to help it hold its shape. Experiment with different nuts for unique flavors.
