- 1 ½ cups all-purpose gluten free flour blend
- ¾ teaspoon xanthan gum
- 5/8 cup cornstarch
- 1 cup confectioners’ sugar, divided, plus more as needed
- ¼ teaspoon kosher salt
- 13 tablespoons finely chopped raw pecans (or walnuts or almonds)
- 16 tablespoons unsalted butter, at cool room temperature
- 2 teaspoons pure vanilla extract
- Lukewarm water, by the teaspoonful as necessary
- 1/3 cup granulated sugar, for rolling
Instructions
- In a large bowl, combine the gluten free flour, xanthan gum, cornstarch, 2/3 cup of confectioners’ sugar, and kosher salt.
- Whisk these dry ingredients together until well combined.
- Add the finely chopped nuts and whisk again.
- Chop the butter into approximately 1 tablespoon chunks and scatter them over the dry ingredients.
- Add the vanilla extract to the mix.
- Incorporate everything until well combined.
- Begin adding lukewarm water by the teaspoonful, mixing well after each addition.
- Scoop the dough using a heaping tablespoon and gently roll each piece into a round shape.
- Coat each ball of cookie dough in granulated sugar by shaking it back and forth.
- Arrange the shaped dough balls on a flat surface and refrigerate for about ten minutes.
- Preheat your oven to 375°F.
- Toss the chilled balls of dough in the remaining 1/3 cup of confectioners’ sugar until evenly coated.
- Place each coated ball on the prepared baking sheet, spacing them about 1 ½ inches apart.
- Bake in the center of the oven for about 12 minutes, or until set and firm to the touch.
- Remove the baking sheet and allow the cookies to cool completely.
- Toss them again in confectioners’ sugar to achieve that characteristic snowball appearance.
Notes
Chill the dough to help it hold its shape. Experiment with different nuts for unique flavors.
