  • 1 tbsp honey
  • 2 garlic cloves, finely minced
  • 1 tsp crushed red pepper flakes
  • 1/4 tsp ground black pepper

Instructions

  1. Start by placing the sliced cucumbers in a large bowl. Sprinkle the salt over them and let them sit for about ten minutes.
  2. While the cucumbers rest, prepare the dressing by mixing soy sauce, rice vinegar, peanut butter, honey, minced garlic, crushed red pepper flakes, and black pepper in a bowl until smooth.
  3. Once the cucumbers have released their moisture, drain excess liquid.
  4. Toss the cucumbers with the dressing, ensuring they are evenly coated.
  5. Add in the toasted peanuts and fresh parsley, giving everything a gentle mix.
  6. Serve chilled for best flavor.

Notes
