- 2 large English cucumbers, sliced 1/3 inch thick
- 1/2 tsp salt
- 1/2 cup toasted chopped peanuts
- 2 tbsp chopped fresh parsley
- 2 tbsp low-sodium soy sauce
- 2 tbsp rice vinegar
- 2 tbsp creamy peanut butter
- 1 tbsp honey
- 2 garlic cloves, finely minced
- 1 tsp crushed red pepper flakes
- 1/4 tsp ground black pepper
Instructions
- Start by placing the sliced cucumbers in a large bowl. Sprinkle the salt over them and let them sit for about ten minutes.
- While the cucumbers rest, prepare the dressing by mixing soy sauce, rice vinegar, peanut butter, honey, minced garlic, crushed red pepper flakes, and black pepper in a bowl until smooth.
- Once the cucumbers have released their moisture, drain excess liquid.
- Toss the cucumbers with the dressing, ensuring they are evenly coated.
- Add in the toasted peanuts and fresh parsley, giving everything a gentle mix.
- Serve chilled for best flavor.
Notes
Can be topped with sesame seeds and adjusted for spice preference. Store leftovers in an airtight container for up to two days.
