- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 eggs, beaten
- ¼ cup milk

- 1 tbsp Dijon mustard (for the glaze)
- 1 tbsp Worcestershire sauce (for the glaze)
- ½ tsp apple cider vinegar (for the glaze)
Instructions
- Preheat the oven to 375°F (190°C) and prepare your baking vessel with grease or parchment paper.
- Sauté onions and garlic in olive oil until soft and fragrant, then let cool.
- In a large bowl, mix together ground beef, breadcrumbs, beaten eggs, milk, Worcestershire sauce, Dijon mustard, ketchup, salt, black pepper, smoked paprika, and parsley.
- Form the mixture into a loaf shape in the prepared pan.
- In a separate bowl, whisk together ketchup, brown sugar, Dijon mustard, Worcestershire sauce, and apple cider vinegar to create the glaze.
- Brush a thin layer of glaze over the meatloaf before placing it in the oven.
- Bake uncovered for 45 minutes, then brush with more glaze and bake for another 15 minutes.
- Check that the internal temperature reaches 160°F (71°C) for proper doneness.
- Let the meatloaf rest for 10 minutes before slicing and serving.
Notes
Avoid over-mixing the meatloaf mixture to keep it tender. Letting it rest after baking helps retain moisture.
