Description

A classic meatloaf recipe that is moist, flavorful, and topped with a perfect glaze, capturing the essence of comfort food.

Ingredients

Scale
  • 2 lbs ground beef (80/20 blend for juiciness)
  • ½ cup breadcrumbs (panko or regular)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 eggs, beaten
  • ¼ cup milk
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • 1 tbsp ketchup
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • 1 tbsp fresh parsley, chopped
  • ½ cup ketchup (for the glaze)
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard (for the glaze)
  • 1 tbsp Worcestershire sauce (for the glaze)
  • ½ tsp apple cider vinegar (for the glaze)

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare your baking vessel with grease or parchment paper.
  2. Sauté onions and garlic in olive oil until soft and fragrant, then let cool.
  3. In a large bowl, mix together ground beef, breadcrumbs, beaten eggs, milk, Worcestershire sauce, Dijon mustard, ketchup, salt, black pepper, smoked paprika, and parsley.
  4. Form the mixture into a loaf shape in the prepared pan.
  5. In a separate bowl, whisk together ketchup, brown sugar, Dijon mustard, Worcestershire sauce, and apple cider vinegar to create the glaze.
  6. Brush a thin layer of glaze over the meatloaf before placing it in the oven.
  7. Bake uncovered for 45 minutes, then brush with more glaze and bake for another 15 minutes.
  8. Check that the internal temperature reaches 160°F (71°C) for proper doneness.
  9. Let the meatloaf rest for 10 minutes before slicing and serving.

Notes

Avoid over-mixing the meatloaf mixture to keep it tender. Letting it rest after baking helps retain moisture.
