  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup water
  • 2 tablespoons olive oil
  • For the spinach pesto:
  • 2 cups fresh spinach
  • 1/2 cup walnuts
  • 1/2 cup olive oil
  • 1/4 cup parmesan cheese
  • 1 clove garlic
  • For toppings:
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup artichoke hearts
  • 1 small red onion, sliced
  • 1 cup grape tomatoes, halved
  • 1/2 cup black olives, sliced

Instructions

  1. Preheat your oven to 450°F (230°C).
  2. In a bowl, combine flour, baking powder, and salt for the flatbread crust.
  3. Add water and olive oil, mixing until a dough forms.
  4. Knead the dough briefly and roll it out to your desired thickness.
  5. Spread the spinach pesto evenly over the flatbread crust.
  6. Sprinkle mozzarella and feta cheeses on top of the pesto.
  7. Arrange artichoke hearts, sliced red onion, halved grape tomatoes, and black olives evenly over the cheese.
  8. Bake in the preheated oven for about 12-15 minutes, or until the cheese is melted and golden brown.
  9. Remove from oven, let cool slightly, then slice and serve.

Notes

For a thinner crust, roll it out gently. Consider roasting the grape tomatoes and olives for enhanced flavor.
