- 1 tablespoon baking powder
- 1 teaspoon salt
- 1 cup water
- 2 tablespoons olive oil
- For the spinach pesto:
- 2 cups fresh spinach
- 1/2 cup walnuts
- 1/2 cup olive oil
- 1/4 cup parmesan cheese
- 1 clove garlic
- For toppings:
- 1 cup mozzarella cheese, shredded
- 1/2 cup feta cheese, crumbled
- 1/2 cup artichoke hearts
- 1 small red onion, sliced
- 1 cup grape tomatoes, halved
- 1/2 cup black olives, sliced
Instructions
- Preheat your oven to 450°F (230°C).
- In a bowl, combine flour, baking powder, and salt for the flatbread crust.
- Add water and olive oil, mixing until a dough forms.
- Knead the dough briefly and roll it out to your desired thickness.
- Spread the spinach pesto evenly over the flatbread crust.
- Sprinkle mozzarella and feta cheeses on top of the pesto.
- Arrange artichoke hearts, sliced red onion, halved grape tomatoes, and black olives evenly over the cheese.
- Bake in the preheated oven for about 12-15 minutes, or until the cheese is melted and golden brown.
- Remove from oven, let cool slightly, then slice and serve.
Notes
For a thinner crust, roll it out gently. Consider roasting the grape tomatoes and olives for enhanced flavor.
