Ingredients

- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, diced
- 1 bell pepper, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup black olives, sliced
- 1/4 cup fresh parsley, chopped
- 3 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the orzo pasta according to package instructions, then drain and let cool.
- In a large bowl, combine the cherry tomatoes, cucumber, red onion, bell pepper, black olives, and parsley.
- In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and pepper.
- Add the cooked orzo to the vegetable mixture and pour the dressing over it.
- Mix well to combine and then add crumbled feta cheese on top.
- Serve chilled or at room temperature.
Notes
Allow the salad to rest for at least 30 minutes after mixing to enhance the flavors. Experiment with additional ingredients like roasted red peppers or artichoke hearts.
