Description

A vibrant Greek pasta salad that combines fresh ingredients for a refreshing dish, perfect for barbecues, picnics, or as a light meal.


Ingredients

  • 8 oz fusilli pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup black olives, sliced
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the fusilli pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and olives.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Add the cooled pasta to the vegetable mixture, pour the dressing over, and toss to combine.
  5. Serve chilled or at room temperature.

Notes

Reserve some of the feta cheese and olives for garnishing to enhance presentation. Experiment with additional ingredients for personalized flavor.
