Ingredients

  • 3 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 teaspoon dried oregano
  • ¾ teaspoon salt
  • 2 twists of black pepper
  • 8 ounces short pasta (casarecce, fusilli, penne, or orzo)
  • 1 can (15 oz) chickpeas (drained and rinsed) or 1½ cups cooked chickpeas (optional)
  • 1 small cucumber (diced)
  • 1½ cup cherry tomatoes (halved)
  • ½ green bell pepper (diced)
  • ½ cup kalamata olives (halved if large)
  • ½ small red onion (thinly sliced)
  • 1 cup feta (crumbled)
  • 3 tablespoons fresh parsley (chopped, or dill)

Instructions

  1. Whisk together olive oil, lemon juice, lemon zest, Dijon mustard, honey, oregano, salt, and black pepper in a large bowl to make the dressing.
  2. Add the drained and rinsed chickpeas to the dressing and let them marinate while preparing the other ingredients.
  3. In a pot, boil water with salt and cook the short pasta until al dente, then drain and rinse under cold water.
  4. Chop the cucumber, halve the cherry tomatoes, dice the green bell pepper, and slice the red onion.
  5. Combine the vegetables with the marinated chickpeas in the bowl.
  6. Sprinkle in the crumbled feta and gently fold it into the mixture.
  7. Add the cooled pasta and mix well to ensure even distribution of flavors.
  8. Chill the Greek pasta salad in the refrigerator for 20–30 minutes before serving.
