Description

Ingredients

  • 8 oz pasta (spaghetti, penne, or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Salt and pepper, to taste

Instructions

  1. Boil a large pot of salted water and cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large sauté pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add halved cherry tomatoes and sliced Kalamata olives, cooking until tomatoes soften.
  4. Toss in the cooked pasta, mixing everything together and allowing the flavors to meld.
  5. Crumble feta cheese on top and gently mix until cheese slightly melts.
  6. Season with salt and pepper to taste, adjusting as needed.
  7. Serve in a large bowl or on individual plates, garnished with additional feta and fresh herbs if desired.

Notes

To save time, prep ingredients ahead of time and have everything ready before you start cooking. Feel free to add red pepper flakes for a bit of heat or toasted pine nuts for added texture.
