Ingredients
- – 1 pound (450g) boneless skinless chicken breasts
- – 1 teaspoon (5 ml) olive oil
- – salt and freshly ground black pepper, to taste
- – 1/2 teaspoon (3 ml) garlic powder
- – 1/4 cup (60ml) celery, diced
- – 1/2 cup (120ml) red onion, diced
- – 1/2 cup (120ml) grapes, red or green, halved
- – 1/2 cup (120ml) apple, diced
- – 1/4 cup (60ml) dried cranberries, diced
- – 1/4 cup (60g) almonds, chopped
- – 1/3 cup (80ml) plain Greek yogurt
- – 2 tablespoons (30 ml) mayonnaise
- – 1 teaspoon (5 ml) lemon juice
- – salt and freshly ground black pepper, to taste
- – 1 head Boston Bib lettuce, or romaine heart leaves, for serving
Instructions
- Drizzle a bit of olive oil in a frying pan and heat it over medium-high flame.
- Cut the chicken into pieces and season it with salt, pepper, and a hint of garlic powder. Cook it in the pan for a few minutes until it’s thoroughly done.
- In a big mixing bowl, combine the chicken, diced celery, red onion, halved grapes, chopped apple, dried cranberries, and almonds.
- In a separate smaller bowl, mix together the Greek yogurt, mayonnaise, and lemon juice until they are well blended.
- Pour the yogurt dressing over the chicken mixture in the large bowl and stir to coat everything evenly. Add salt and pepper if needed.
- Rinse the lettuce, separate into individual leaves, and dry them gently with a paper towel.
- Place a generous scoop of the chicken salad onto each lettuce leaf to serve.
