Ingredients

  • 2 cups tomatillos, husked and chopped
  • 1 cup cilantro, packed
  • 1 tablespoon olive oil
  • 1 garlic clove, minced
  • 1 tablespoon lime juice
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the minced garlic and sauté for about one minute until fragrant.
  2. Stir in the tomatillos and cook for approximately 5 minutes until softened.
  3. Pour in the chicken or vegetable broth and bring to a simmer.
  4. After simmering for 10 minutes, remove the pot from the heat. Add cilantro, lime juice, cumin, salt, and pepper. Blend the mixture until smooth using an immersion blender.
  5. Return the pot to low heat, allowing it to warm through. Taste and adjust seasoning as desired.
  6. Serve hot, garnished with tortilla chips.
