Ingredients

- 4 cups chicken or vegetable broth
- 2 cups tomatillos, husked and chopped
- 1 cup cilantro, packed
- 1 tablespoon olive oil
- 1 garlic clove, minced
- 1 tablespoon lime juice
- 1 teaspoon cumin
- Salt and pepper to taste
- Tortilla chips for serving
Instructions
- Heat the olive oil in a large pot over medium heat. Add the minced garlic and sauté for about one minute until fragrant.
- Stir in the tomatillos and cook for approximately 5 minutes until softened.
- Pour in the chicken or vegetable broth and bring to a simmer.
- After simmering for 10 minutes, remove the pot from the heat. Add cilantro, lime juice, cumin, salt, and pepper. Blend the mixture until smooth using an immersion blender.
- Return the pot to low heat, allowing it to warm through. Taste and adjust seasoning as desired.
- Serve hot, garnished with tortilla chips.
Notes
Choose bright green and firm tomatillos for freshness. Adjust seasoning and try different garnishes for added flavor.
