Description

A flavorful and vibrant grilled chicken shawarma bowl that combines marinated chicken with fresh vegetables and tahini sauce.


Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 cup plain yogurt
  • 3 garlic cloves, minced
  • ¼ cup fresh lemon juice
  • 2 tsp cumin
  • 2 tsp paprika
  • 1 tsp turmeric
  • Fresh tomatoes, diced
  • Fresh cucumbers, diced
  • Tahini sauce
  • Fresh parsley, chopped
  • Fresh mint, chopped

Instructions

  1. Combine chicken with yogurt, garlic, lemon juice, cumin, paprika, turmeric, salt, and pepper. Mix well and marinate for at least one hour.
  2. Preheat grill to medium-high heat, around 375°F (190°C), and oil the grates.
  3. Grill marinated chicken for 6-7 minutes per side until it reaches an internal temperature of 165°F (75°C). Remove and let it rest.
  4. Whisk together tahini sauce, additional lemon juice, and water to create a dressing.
  5. Chop fresh tomatoes and cucumbers, mixing them with parsley and mint.
  6. Slice the rested chicken thinly against the grain.
  7. Assemble the bowls with rice or pita, topping with vegetables, chicken, and tahini sauce.

Notes

For best results, marinate the chicken overnight. Letting the chicken rest after grilling helps retain juiciness.
