- 1/2 tbsp (7.5 ml) extra-virgin olive oil, plus more for the grill
- 3 chipotle peppers in adobo sauce, finely chopped
- 2 garlic cloves, finely chopped
- 4–5 fresh peaches, 2 cups (480 ml) peeled and chopped with the extra peaches cut into thick slices
- 3 tbsp (45 ml) tomato paste
- 2 tbsp (30 ml) agave nectar, or brown sugar
- 1 tbsp (15 ml) apple cider vinegar
- 1/8 tsp (0.5 ml) sea salt, plus more for the grill
- 1/8 tsp (0.5 ml) freshly ground black pepper, plus more for the grill
- 4 boneless, skinless chicken breasts
- extra-virgin olive oil, for grilling
Instructions
- Pour the extra-virgin olive oil into a medium saucepan and warm it on medium heat.
- Introduce the chopped garlic and sauté, stirring for around two minutes.
- Incorporate the finely chopped chipotle peppers and continue to sauté for an additional minute.
- Add the chopped peaches, tomato paste, agave nectar, apple cider vinegar, sea salt, and black pepper.
- Lower the heat to medium-low and let it simmer for roughly five minutes, stirring now and then while mashing the peaches with a wooden spoon.
- Allow the mixture to cool before transferring it to a food processor to blend until smooth (or use an immersion blender).
- Cover the sauce and refrigerate until needed. This yields approximately 1 ½ cups of sauce.
- Set the grill for direct heat cooking at a high temperature (450°F) and clean the grilling grates.
- Drizzle olive oil over the chicken breasts and massage it in. Season well with sea salt and freshly ground black pepper.
- Place the thick peach slices in a grill basket.
- Set the chicken breasts onto the hot grill, cover, and grill for 5-6 minutes until they detach easily from the grates.
- Turn the chicken over and grill for another 4-5 minutes.
- Add the peach slices to the grill, cooking them for 4-5 minutes until they soften.
- Brush the chicken with the peach chipotle sauce, turn, and cook for another 2 minutes.
- Brush once more, flip, and grill for an additional 2 minutes.
- Cook until the chicken feels firm and fully cooked, reaching an internal temperature of 160°F (it will rise to 165°F while resting).
- Move the chicken to a plate, cover with aluminum foil, and let it rest for 5 minutes.
- Serve with the grilled peach slices and additional peach chipotle sauce, if you like.
