  • 3 chipotle peppers in adobo sauce, finely chopped
  • 2 garlic cloves, finely chopped
  • 45 fresh peaches, 2 cups (480 ml) peeled and chopped with the extra peaches cut into thick slices
  • 3 tbsp (45 ml) tomato paste
  • 2 tbsp (30 ml) agave nectar, or brown sugar
  • 1 tbsp (15 ml) apple cider vinegar
  • 1/8 tsp (0.5 ml) sea salt, plus more for the grill
  • 1/8 tsp (0.5 ml) freshly ground black pepper, plus more for the grill
  • 4 boneless, skinless chicken breasts
  • extra-virgin olive oil, for grilling

Instructions

  1. Pour the extra-virgin olive oil into a medium saucepan and warm it on medium heat.
  2. Introduce the chopped garlic and sauté, stirring for around two minutes.
  3. Incorporate the finely chopped chipotle peppers and continue to sauté for an additional minute.
  4. Add the chopped peaches, tomato paste, agave nectar, apple cider vinegar, sea salt, and black pepper.
  5. Lower the heat to medium-low and let it simmer for roughly five minutes, stirring now and then while mashing the peaches with a wooden spoon.
  6. Allow the mixture to cool before transferring it to a food processor to blend until smooth (or use an immersion blender).
  7. Cover the sauce and refrigerate until needed. This yields approximately 1 ½ cups of sauce.
  8. Set the grill for direct heat cooking at a high temperature (450°F) and clean the grilling grates.
  9. Drizzle olive oil over the chicken breasts and massage it in. Season well with sea salt and freshly ground black pepper.
  10. Place the thick peach slices in a grill basket.
  11. Set the chicken breasts onto the hot grill, cover, and grill for 5-6 minutes until they detach easily from the grates.
  12. Turn the chicken over and grill for another 4-5 minutes.
  13. Add the peach slices to the grill, cooking them for 4-5 minutes until they soften.
  14. Brush the chicken with the peach chipotle sauce, turn, and cook for another 2 minutes.
  15. Brush once more, flip, and grill for an additional 2 minutes.
  16. Cook until the chicken feels firm and fully cooked, reaching an internal temperature of 160°F (it will rise to 165°F while resting).
  17. Move the chicken to a plate, cover with aluminum foil, and let it rest for 5 minutes.
  18. Serve with the grilled peach slices and additional peach chipotle sauce, if you like.
