Grilled Shrimp Summer Salad

A refreshing summer salad featuring grilled shrimp, corn, and a vibrant green goddess dressing, perfect for warm weather gatherings.


Ingredients

  • 6 scallions (roots removed)
  • 1 cup fresh parsley leaves
  • 1 cup fresh basil leaves
  • ½ cup mayo
  • ½ cup Greek yogurt
  • 5 fillets canned anchovies (about ½ ounce)
  • ⅓ cup fresh lemon juice
  • 1 clove garlic
  • 1½ teaspoons salt (divided)
  • ½ teaspoon ground black pepper (divided)
  • 4 heads romaine lettuce
  • ¼ cup olive oil (divided)
  • 3 ears corn (husks removed)
  • 1 pound jumbo raw shrimp (peeled, deveined)
  • 1 medium avocado
  • Green goddess dressing (prepared earlier)

Instructions

  1. Blend all green goddess ingredients in a food processor until smooth and refrigerate.
  2. Preheat the grill to high heat, approximately 550°F, and brush grates with olive oil.
  3. Cut one head of romaine in half lengthwise, brush with olive oil, and grill for 2 minutes until charred. Set aside to cool.
  4. Cut remaining romaine heads into pieces and place them in a large bowl.
  5. Brush corn with olive oil, sprinkle with salt and pepper, and grill for about 8 minutes.
  6. Toss raw shrimp with 1½ teaspoons salt, ½ teaspoon black pepper, and 2 tablespoons olive oil, then place on the grill for 2 minutes. Flip and cook for 1 more minute, then remove and set aside to cool.
  7. After grilling corn, cut off the cob and toss into the bowl with romaine.
  8. Divide salad mixture among 4 plates and top each with grilled shrimp.
  9. Cut grilled romaine into halves again and place one piece on each plate.
  10. Slice avocado and place on each plate.
  11. Drizzle with green goddess dressing before serving.

Notes

For added flavor, consider marinating the shrimp before grilling. Use fresh, high-quality ingredients for the best results.
