Ingredients

  • 2 medium Zucchini (bell peppers or asparagus work too)
  • 2 tablespoons Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 tablespoon Dijon Mustard (optional)
  • 1 cup Sour Cream or Greek Yogurt (use plant-based yogurt for dairy-free)
  • 2 tablespoons Fresh Herbs (Chives or Parsley, for variation)
  • 2 cups Cooked Rice or Mashed Potatoes (Jasmine rice or cauliflower mash works great)

Instructions

  1. Begin by marinating the steak. In a bowl, combine the olive oil, garlic powder, onion powder, and Dijon mustard. Coat the steak evenly and let it sit for at least 30 minutes.
  2. Preheat your grill to medium-high heat. While it’s warming up, slice the zucchini.
  3. Drizzle the zucchini slices with olive oil and season with salt and pepper. Set aside.
  4. Once the grill is ready, place the steak on the grill. Cook for about 6-7 minutes per side, or until it reaches your desired level of doneness.
  5. Just a few minutes before the steak finishes cooking, place the zucchini on the grill. Grill for about 3-4 minutes on each side until tender and charred.
  6. Allow the steak to rest for a few minutes after grilling. While it rests, mix the sour cream or Greek yogurt with freshly chopped herbs to create your sauce.
  7. Serve the sliced steak over a bed of cooked rice or topped with mashed potatoes, accompanied by grilled zucchini. Drizzle the creamy herb sauce generously over the top.
