For the Elote:

  • 4 ears fresh corn, husked
  • 2 tablespoons vegetable oil

  • โ…“ cup Mexican crema
  • ยฝ cup cotija cheese, crumbled
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • ยฝ teaspoon smoked paprika
  • ยผ cup fresh cilantro
  • 2 cloves garlic, minced

For Assembly:

  • 12 corn tortillas
  • 1 large avocado, sliced
  • 1 small red onion, diced
  • Fresh cilantro
  • 2 limes, wedged
  • Hot sauce (optional)

Instructions

  1. Combine marinade ingredients and marinate steak for 20 minutes to 8 hours.
  2. Brush corn with oil and season with salt.
  3. Mix elote sauce ingredients in a bowl.
  4. Grill steak 4-5 minutes per side for medium-rare.
  5. Grill corn 10-12 minutes until charred.
  6. Rest steak 5 minutes before slicing against the grain.
  7. Cut corn off cob and mix with half the elote sauce.
  8. Warm tortillas on grill.
  9. Assemble tacos with steak, corn mixture, toppings, and remaining sauce.
