  • 16 ounces skirt steak (cut into 6-inch sections)
  • Juice of 1 orange (around ¼ cup)
  • Juice of 1 large lime (around 2 tablespoons)
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • 1 teaspoon onion powder
  • ½ teaspoon freshly-cracked black pepper
  • ½ teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • ½ teaspoon dry oregano
  • 2 tablespoons avocado oil
  • 6 green onions
  • 6 corn tortillas
  • ¼ cup finely chopped white onion (for serving)
  • 2 tablespoons avocado oil (for salsa)
  • 1 pound tomatillos (husks peeled and rinsed)
  • ½ yellow onion (sliced in half)
  • 2 cloves garlic (skins peeled)
  • 1 jalapeño (sliced in half, seeds removed for mild heat)
  • ¼ cup water
  • ¼ cup fresh cilantro
  • Juice of 1 lime (around 2 tablespoons, plus more to taste)
  • ½ teaspoon dry oregano (for salsa)
  • ½ teaspoon kosher salt (for salsa, plus more to taste)
  • 1 ripe avocado
  • ½ cup finely chopped fresh cilantro (divided in half)

Instructions

  1. To prepare the salsa, heat 2 tablespoons of avocado oil in a skillet over medium heat. Add the tomatillos, yellow onion, garlic, and jalapeño. Sauté for about 5-7 minutes until the tomatillos soften and turn slightly brown. Let it cool before blending with water, cilantro, lime juice, dry oregano, and salt.
  2. In a bowl, mix the orange juice, lime juice, paprika, kosher salt, onion powder, black pepper, smoked paprika, ground cumin, dry oregano, and avocado oil. Coat the skirt steak pieces thoroughly with the marinade. Let it rest for at least 30 minutes.
  3. Preheat your grill to high heat. Grill the marinated steak sections for 4-5 minutes on each side. Grill the corn tortillas for about 30 seconds on each side to warm them up.
  4. After cooking, let the steak rest for a few minutes before slicing it thinly against the grain.
  5. Assemble the grilled steak tacos by layering slices of steak in each tortilla, topped with chopped white onions, fresh cilantro, and avocado salsa verde.

Notes

Allow the steak to marinate longer for a deeper flavor, and customize taco toppings as desired.
