Ingredients

  • – 8 tbsp / 120g Unsalted Butter, softened
  • – 2 tbsp (30 ml) very finely diced Fresh Parsley
  • – 1 tbsp (15 ml) very finely diced Fresh Chives
  • – 1/2 tsp (3 ml) (not tbsp!) very finely diced Fresh Thyme Leaves
  • – 1 clove Garlic, finely grated/minced
  • – 2 tsp (10 ml) Lemon Juice
  • – 1 tsp (5 ml) Dijon Mustard
  • – 3/4 tsp (4 ml) Smoked Paprika
  • – 1/2 tsp (3 ml) Worcestershire Sauce
  • – 1/2 tsp (3 ml) Chilli Flakes, or to spice preference
  • – 1/2 tsp (3 ml) Salt, or to taste
  • – 1/4 tsp (1 ml) Black Pepper, or to taste
  • – 2x 220g/8oz Beef Steaks, at room temp
  • – 1 tbsp (15 ml) Vegetable Oil
  • – Salt & Black Pepper, as needed

Instructions

  1. Place the softened butter and all the cowboy butter ingredients into a small bowl and mix thoroughly.
  2. Ensure the steaks are dry by patting them with a paper towel, then coat both sides liberally with salt and pepper.
  3. Heat a large cast-iron skillet or heavy pan on high until very hot.
  4. Pour in the vegetable oil and let it heat for 5-10 seconds.
  5. To achieve medium-rare doneness, place the steaks into the pan and cook for 2 minutes without moving them.
  6. Turn the steaks over and cook for another 2 minutes, then take them out and allow them to rest for 5 minutes.
  7. Serve the steaks topped with your preferred amount of cowboy butter and savor the dish!

Notes

  • Ensure the butter is at room temperature to easily blend with fresh herbs and seasonings.
  • Pat the steaks dry before seasoning to enhance sear and flavor.
  • Use a meat thermometer to achieve your preferred level of doneness for the steaks.
