- 1/2 cup chopped onion (75 g) (red, yellow, or white onion all work)
- 1 tbsp (15 ml) minced garlic
- 1 lb ground beef (450 g) (90/10, which means 90% lean/10% fat)
- 2 tbsp (30 ml) taco seasoning
- 1/2 tsp cornstarch (2.5 g) whisked with 1/4 cup of water (60 ml)
- 1 tbsp (15 ml) tomato paste

Instructions
- In a spacious frying pan, warm the avocado oil over medium heat, then toss in the chopped onion. Sprinkle with a pinch of salt and sauté for 5 minutes until it begins to soften.
- Introduce the minced garlic and stir for 30 seconds until its aroma is released.
- Increase the heat to medium-high, add the ground beef, and season with some salt and black pepper. Cook, stirring frequently, for 3-4 minutes until it begins to brown.
- Incorporate the taco seasoning and continue cooking for 2-3 minutes until the beef is no longer pink.
- Pour in the cornstarch mixture and blend in the tomato paste, cooking for an additional 3 minutes until the liquid thickens. Taste and adjust the seasoning with salt and pepper as needed, then take the pan off the heat.
- Fill the taco shells with the cooked beef and add your preferred toppings before serving. Enjoy your meal!
