Ingredients

Scale
  • 1 tbsp avocado oil (15 ml)
  • 1/2 cup chopped onion (75 g) (red, yellow, or white onion all work)
  • 1 tbsp (15 ml) minced garlic
  • 1 lb ground beef (450 g) (90/10, which means 90% lean/10% fat)
  • 2 tbsp (30 ml) taco seasoning
  • 1/2 tsp cornstarch (2.5 g) whisked with 1/4 cup of water (60 ml)
  • 1 tbsp (15 ml) tomato paste
  • taco shells for serving
  • salt
  • black pepper
  • guacamole
  • tomato salsa
  • shredded iceberg lettuce
  • sour cream
  • mexican shredded cheese

Instructions

  1. In a spacious frying pan, warm the avocado oil over medium heat, then toss in the chopped onion. Sprinkle with a pinch of salt and sauté for 5 minutes until it begins to soften.
  2. Introduce the minced garlic and stir for 30 seconds until its aroma is released.
  3. Increase the heat to medium-high, add the ground beef, and season with some salt and black pepper. Cook, stirring frequently, for 3-4 minutes until it begins to brown.
  4. Incorporate the taco seasoning and continue cooking for 2-3 minutes until the beef is no longer pink.
  5. Pour in the cornstarch mixture and blend in the tomato paste, cooking for an additional 3 minutes until the liquid thickens. Taste and adjust the seasoning with salt and pepper as needed, then take the pan off the heat.
  6. Fill the taco shells with the cooked beef and add your preferred toppings before serving. Enjoy your meal!

Notes

  • Use lean ground beef (90/10) for a healthier option and to reduce the fat content.
  • Adjust the taco seasoning to your preference for spiciness.
  • Experiment with toppings like diced avocado or cilantro for added freshness and flavor.
