  • 3 bell peppers (red, yellow, green), sliced
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon tomato paste
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced onion and cook for 2 minutes.
  3. Add minced garlic and sauté for 30 seconds.
  4. Incorporate ground turkey, cooking until it browns and is no longer pink, breaking it up as it cooks.
  5. Stir in the sliced bell peppers and cook for another 5 minutes until they are tender-crisp.
  6. Add tomato paste, soy sauce, paprika, salt, and pepper, then stir to coat evenly.
  7. Simmer for 2-3 minutes, then remove from heat and garnish with parsley if desired.

Notes

For additional flavor, consider browning the turkey well or adding crushed red pepper flakes for heat. Store leftovers in the refrigerator for up to 3 days or freeze for up to 3 months.
