Description

Delicious and hearty ground turkey black bean enchiladas wrapped in soft tortillas and smothered in enchilada sauce, perfect for family meals and gatherings.


Ingredients

  • 1 pound ground turkey
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 corn or flour tortillas
  • 2 cups enchilada sauce
  • 1 cup shredded cheese (optional)
  • Chopped cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet over medium heat, cook the ground turkey, onion, and garlic until the turkey is browned and the onion is translucent.
  3. Stir in the black beans, cumin, chili powder, salt, and pepper. Cook for a few more minutes until heated through.
  4. In a baking dish, spread a thin layer of enchilada sauce.
  5. Fill each tortilla with the turkey and bean mixture, roll them up, and place them seam-side down in the baking dish.
  6. Pour the remaining enchilada sauce over the top and sprinkle with cheese if using.
  7. Bake for 20-25 minutes until the cheese is melted and the sauce is bubbling.
  8. Garnish with chopped cilantro before serving.

Notes

Feel free to add more vegetables or adjust spice levels according to your preferences. These enchiladas can also be assembled a day ahead and refrigerated.
