Delicious and hearty ground turkey black bean enchiladas wrapped in soft tortillas and smothered in enchilada sauce, perfect for family meals and gatherings.

- 1 pound ground turkey
- 1 can (15 oz) black beans, rinsed and drained
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- 8 corn or flour tortillas
- 2 cups enchilada sauce
- 1 cup shredded cheese (optional)
- Chopped cilantro for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet over medium heat, cook the ground turkey, onion, and garlic until the turkey is browned and the onion is translucent.
- Stir in the black beans, cumin, chili powder, salt, and pepper. Cook for a few more minutes until heated through.
- In a baking dish, spread a thin layer of enchilada sauce.
- Fill each tortilla with the turkey and bean mixture, roll them up, and place them seam-side down in the baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with cheese if using.
- Bake for 20-25 minutes until the cheese is melted and the sauce is bubbling.
- Garnish with chopped cilantro before serving.
Notes
Feel free to add more vegetables or adjust spice levels according to your preferences. These enchiladas can also be assembled a day ahead and refrigerated.
