  • 1 can (240g) chickpeas – drained and patted dry
  • 1 block (250g) beef halloumi – cubed
  • 1 tablespoon (15 ml) hot honey
  • 1 teaspoon (5 ml) za’atar
  • salt to taste
  • black pepper to taste
  • 1 small head broccoli
  • 1 tablespoon (15 ml) vegetable oil
  • salt to taste
  • black pepper to taste
  • 1/4 cup (60g) Greek yogurt
  • 2 tablespoons (30ml) olive oil
  • 1 clove garlic
  • juice from 1/2 lemon
  • 1/4 cup (15g) fresh chopped mint
  • salt to taste
  • pepper to taste
  • 1/2 cup (120 ml) cooked quinoa – sub in grain of choice
  • pickled onions – optional

Instructions

  1. Set your oven to 425°F to preheat.
  2. Combine the chickpeas and halloumi cubes with some oil, hot honey, za’atar, and season with salt and pepper. Spread them out on a nonstick or parchment-lined baking tray.
  3. On the same baking tray, add the broccoli and coat it with oil, salt, and pepper.
  4. Roast the broccoli, chickpeas, and halloumi for half an hour. If you prefer less crispy broccoli, take it out after about 20-25 minutes.
  5. In a mixing bowl, blend all the yogurt sauce components until the mixture is smooth.
  6. Evenly distribute the quinoa into two serving bowls. Layer the roasted items on top and drizzle with the yogurt dressing. Add pickled onions if desired. Enjoy your meal.
