- 3 pounds Beef shoulder (boneless), cut into 2-inch chunks
- 2 tablespoons vegetable oil for searing
- For the Marinade:
- 1 cup pineapple juice (fresh is best, but canned works too)
- ½ cup soy sauce (low sodium recommended)
- ¼ cup brown sugar (packed)
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons apple cider vinegar
- 1 tablespoon sesame oil
- 1 teaspoon black pepper
- 1 small onion, finely diced
- 2 green onions, chopped
- For the Glaze:
- ½ cup reserved marinade
- 2 tablespoons honey
- 1 tablespoon cornstarch mixed with 2 tablespoons water
Instructions
- Prepare the Marinade: Combine pineapple juice, soy sauce, brown sugar, minced garlic, grated ginger, apple cider vinegar, sesame oil, and black pepper in a large bowl. Whisk until sugar dissolves completely.
- Marinate the Beef: Place Beef chunks in a ziplock bag or container. Reserve ½ cup of marinade for later, then pour the rest over the Beef. Refrigerate for 4-24 hours, turning halfway through.
- Prepare Your Grill: Heat grill to medium-high heat (375-400°F). Clean grates thoroughly.
- Sear and Grill the Beef: Remove Beef from marinade, pat dry. Sear in hot oil for 2-3 minutes per side. Transfer to grill over indirect heat. Cook for 15 minutes, flip, and cook another 10-15 minutes until internal temperature reaches 145°F.
- Prepare the Glaze: Bring reserved marinade to a boil in a saucepan, add honey, then reduce heat. Whisk in cornstarch slurry and simmer 3-5 minutes until thickened.
- Apply the Glaze: During the last 5 minutes of grilling, brush Beef with glaze multiple times, turning frequently to create a caramelized coating.
- Rest and Serve: Remove Beef from grill and rest for 5-10 minutes before slicing or pulling. Drizzle with remaining glaze.
