Ingredients

- 1 bunch of Asparagus
- 2 medium Zucchini
- 2 medium Yellow Squash
- 2 tablespoons Olive Oil
- 2 cloves Garlic, minced
- 1 Lemon, juiced
- Fresh Herbs (thyme, oregano, or basil)
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C) if roasting.
- Rinse and trim the asparagus, and slice the zucchini and squash into thin rounds.
- In a large bowl, toss the asparagus, zucchini, and squash with olive oil, minced garlic, lemon juice, herbs, salt, and pepper.
- If sautéing, heat a skillet over medium heat and cook the vegetable mixture for about 5-7 minutes until tender-crisp. If roasting, spread the vegetables on a baking sheet and roast for 15-20 minutes until tender.
- Serve warm and enjoy the vibrant flavors.
Notes
Opt for younger, firmer vegetables for the best results. Experiment with different herbs to customize flavors.
