Description

A vibrant and nutritious medley of asparagus, zucchini, and squash, perfect as a side dish or a main course.


Ingredients

  • 1 bunch of Asparagus
  • 2 medium Zucchini
  • 2 medium Yellow Squash
  • 2 tablespoons Olive Oil
  • 2 cloves Garlic, minced
  • 1 Lemon, juiced
  • Fresh Herbs (thyme, oregano, or basil)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C) if roasting.
  2. Rinse and trim the asparagus, and slice the zucchini and squash into thin rounds.
  3. In a large bowl, toss the asparagus, zucchini, and squash with olive oil, minced garlic, lemon juice, herbs, salt, and pepper.
  4. If sautéing, heat a skillet over medium heat and cook the vegetable mixture for about 5-7 minutes until tender-crisp. If roasting, spread the vegetables on a baking sheet and roast for 15-20 minutes until tender.
  5. Serve warm and enjoy the vibrant flavors.

Notes

Opt for younger, firmer vegetables for the best results. Experiment with different herbs to customize flavors.
