Ingredients

  • 1/4 cup coconut sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened applesauce
  • 1 tablespoon melted coconut oil
  • 1 teaspoon vanilla extract
  • Cooking spray
  • 1/4 cup coconut sugar + 1 tablespoon cinnamon for topping

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly spray a mini muffin tin with cooking spray.
  2. Mix together whole wheat flour, coconut sugar, baking powder, cinnamon, and salt in a large bowl.
  3. Stir in the applesauce, melted coconut oil, and vanilla extract until well combined.
  4. Spoon the batter into the mini muffin tin, filling each cup about 2/3 full.
  5. Bake for 12-15 minutes or until golden.
  6. Let them cool slightly, then roll them in the cinnamon sugar mixture.
