Ingredients

- 1 cup whole wheat flour
- 1/4 cup coconut sugar
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup unsweetened applesauce
- 1 tablespoon melted coconut oil
- 1 teaspoon vanilla extract
- Cooking spray
- 1/4 cup coconut sugar + 1 tablespoon cinnamon for topping
Instructions
- Preheat your oven to 350°F (175°C) and lightly spray a mini muffin tin with cooking spray.
- Mix together whole wheat flour, coconut sugar, baking powder, cinnamon, and salt in a large bowl.
- Stir in the applesauce, melted coconut oil, and vanilla extract until well combined.
- Spoon the batter into the mini muffin tin, filling each cup about 2/3 full.
- Bake for 12-15 minutes or until golden.
- Let them cool slightly, then roll them in the cinnamon sugar mixture.
- Serve warm and enjoy your healthy treat!
