Transform the classic carrot cake into healthy oatmeal cookies packed with flavor and nutrition.


Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup almond flour
  • 1/2 cup mashed bananas or unsweetened applesauce
  • 1/4 cup honey or maple syrup
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup chopped nuts or raisins (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the rolled oats, grated carrots, almond flour, mashed bananas (or applesauce), honey (or maple syrup), cinnamon, baking powder, and salt. Mix until well combined.
  3. If desired, fold in the chopped nuts or raisins.
  4. Scoop tablespoon-sized amounts of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake for 12-15 minutes or until the edges are slightly golden.
  6. Allow to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.

Notes

Use fresh and finely grated carrots for the best results. Experiment with different nuts or dried fruits for added flavor.
