- 1 cup rolled oats
- 1 cup grated carrots
- 1/2 cup almond flour
- 1/2 cup mashed bananas or unsweetened applesauce
- 1/4 cup honey or maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup chopped nuts or raisins (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the rolled oats, grated carrots, almond flour, mashed bananas (or applesauce), honey (or maple syrup), cinnamon, baking powder, and salt. Mix until well combined.
- If desired, fold in the chopped nuts or raisins.
- Scoop tablespoon-sized amounts of the dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the edges are slightly golden.
- Allow to cool for a few minutes on the baking sheet before transferring to a wire rack to cool completely.
Notes
Use fresh and finely grated carrots for the best results. Experiment with different nuts or dried fruits for added flavor.
