Ingredients

  • 2 ripe medium bananas (180g)
  • 90g (240ml) rolled oats
  • 30g (60ml) pumpkin seeds
  • 20g (60ml) unsweetened shredded coconut
  • 40g (60ml) dried cranberries
  • 1 Tablespoon (15 ml) chia seeds
  • 1/2 teaspoon (3 ml) cinnamon
  • Pinch salt

Instructions

  1. Warm up the oven to 175°C (or 155°C if using a fan-assisted oven).
  2. Prepare a baking sheet by lining it with parchment paper and put it aside.
  3. In a small dish, mash the bananas until they are smooth and set this aside.
  4. In a large mixing bowl, combine all the remaining ingredients.
  5. Pour the mashed bananas over the dry ingredients.
  6. Stir thoroughly to make sure the bananas coat all the dry components.
  7. Allow the mixture to sit for five minutes so that the bananas can be absorbed.
  8. Scoop out a little less than 1/4 cup of the mixture and press it into a firm, round shape. If it falls apart, give it a few more minutes and try again.
  9. Position the formed cookie on the lined baking sheet and gently flatten it to approximately 7cm in diameter and 1.5cm in height. The cookies will maintain their shape while baking.
  10. Continue this process with the remaining mixture.
  11. Place in the oven and bake for 15 to 20 minutes, or until they achieve a golden color.
  12. Take them out of the oven and move them to a cooling rack to cool down completely.
  13. Store in a sealed container for up to two days, or freeze for future use.

Notes

  • For added crunch, consider toasting the pumpkin seeds before mixing them in.
  • For a sweeter flavor, drizzle honey or maple syrup on the mashed bananas.
