- 2 ripe medium bananas (180g)
- 90g (240ml) rolled oats
- 30g (60ml) pumpkin seeds
- 20g (60ml) unsweetened shredded coconut
- 40g (60ml) dried cranberries
- 1 Tablespoon (15 ml) chia seeds
- 1/2 teaspoon (3 ml) cinnamon
- Pinch salt
Instructions
- Warm up the oven to 175°C (or 155°C if using a fan-assisted oven).
- Prepare a baking sheet by lining it with parchment paper and put it aside.
- In a small dish, mash the bananas until they are smooth and set this aside.
- In a large mixing bowl, combine all the remaining ingredients.
- Pour the mashed bananas over the dry ingredients.
- Stir thoroughly to make sure the bananas coat all the dry components.
- Allow the mixture to sit for five minutes so that the bananas can be absorbed.
- Scoop out a little less than 1/4 cup of the mixture and press it into a firm, round shape. If it falls apart, give it a few more minutes and try again.
- Position the formed cookie on the lined baking sheet and gently flatten it to approximately 7cm in diameter and 1.5cm in height. The cookies will maintain their shape while baking.
- Continue this process with the remaining mixture.
- Place in the oven and bake for 15 to 20 minutes, or until they achieve a golden color.
- Take them out of the oven and move them to a cooling rack to cool down completely.
- Store in a sealed container for up to two days, or freeze for future use.
Notes
- For added crunch, consider toasting the pumpkin seeds before mixing them in.
- For a sweeter flavor, drizzle honey or maple syrup on the mashed bananas.
- Experiment with various dried fruits like raisins or chopped apricots for different tastes.
