- 1 cup couscous
- 1 1/4 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 diced cucumber
- 1/2 finely chopped red onion
- 1/2 bell pepper, diced
- 1 cup chickpeas, drained and rinsed
- 1/4 cup crumbled feta cheese
- 1/4 cup halved olives
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
- Fresh chopped parsley for garnish
Instructions
- In a medium saucepan, bring vegetable broth to a boil.
- Add couscous, stir gently, and remove the saucepan from heat. Cover and let sit for 5 minutes.
- Fluff the couscous with a fork once ready.
- Prepare vegetables: halve cherry tomatoes, dice cucumber, finely chop red onion, and dice bell pepper.
- Rinse chickpeas, crumble feta, and halve olives.
- In a large bowl, combine fluffed couscous, tomatoes, cucumber, onion, bell pepper, and chickpeas.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Drizzle dressing over salad mixture and toss gently to combine.
- Garnish with fresh parsley and serve.
Notes
For meal prep, keep the dressing separate until serving to maintain freshness. Can be personalized with additional proteins or spices.
