A vibrant salad combining couscous, fresh vegetables, and Mediterranean flavors, perfect for a light lunch or as a side dish.


Ingredients

  • 1 cup couscous
  • 1 1/4 cups vegetable broth
  • 1 cup cherry tomatoes, halved
  • 1 diced cucumber
  • 1/2 finely chopped red onion
  • 1/2 bell pepper, diced
  • 1 cup chickpeas, drained and rinsed
  • 1/4 cup crumbled feta cheese
  • 1/4 cup halved olives
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh chopped parsley for garnish

Instructions

  1. In a medium saucepan, bring vegetable broth to a boil.
  2. Add couscous, stir gently, and remove the saucepan from heat. Cover and let sit for 5 minutes.
  3. Fluff the couscous with a fork once ready.
  4. Prepare vegetables: halve cherry tomatoes, dice cucumber, finely chop red onion, and dice bell pepper.
  5. Rinse chickpeas, crumble feta, and halve olives.
  6. In a large bowl, combine fluffed couscous, tomatoes, cucumber, onion, bell pepper, and chickpeas.
  7. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  8. Drizzle dressing over salad mixture and toss gently to combine.
  9. Garnish with fresh parsley and serve.

Notes

For meal prep, keep the dressing separate until serving to maintain freshness. Can be personalized with additional proteins or spices.
