- 8 oz pasta (your choice)
- 1 cup cherry tomatoes, halved
- 1 zucchini, diced
- 1 bell pepper, diced
- 1 cup spinach
- 1/2 cup feta cheese, crumbled
- 1/4 cup olive oil
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Cook the pasta according to package instructions until al dente, then drain.
- In a large bowl, combine pasta, cherry tomatoes, zucchini, bell pepper, spinach, feta cheese, olive oil, garlic, oregano, salt, and pepper.
- Transfer the mixture to a baking dish and spread evenly.
- Bake in the preheated oven for about 25-30 minutes until vegetables are tender and the top is golden.
- Remove from the oven, garnish with fresh basil, and serve warm.
Notes
Add breadcrumbs or extra feta cheese on top for a crispy finish. Experiment with seasonal vegetables for variety.
