  • 1 cup salsa verde
  • 1 cup cooked quinoa
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced bell peppers
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 cup shredded cheese (optional)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Combine the cooked shredded chicken, salsa verde, cooked quinoa, black beans, corn, diced bell peppers, cumin, garlic powder, salt, and pepper in a large mixing bowl.
  3. Pour the mixture into a greased casserole dish and spread evenly.
  4. Sprinkle shredded cheese on top if using.
  5. Bake in the preheated oven for 25-30 minutes, or until heated through and cheese is melted.
