A comforting and delicious ground turkey soup, rich in flavor and perfect for cold days.


Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 cup white onions, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • ½ lb ground turkey
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 2 tablespoons tomato paste
  • 6 cups chicken broth
  • 1 cup crushed tomatoes
  • 2 cups potatoes, diced
  • 1 cup frozen green peas
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onions, carrots, and celery; sauté until onions are translucent, about 5 minutes.
  2. Stir in ground turkey, breaking it apart. Cook until browned, about 6-8 minutes.
  3. Add minced garlic and tomato paste; sauté for an additional minute.
  4. Pour in chicken broth and crushed tomatoes; add Italian seasoning and salt and pepper to taste. Stir well.
  5. Incorporate diced potatoes, reduce heat, and simmer for 20-25 minutes.
  6. Add frozen peas and chopped parsley; cook for another 5 minutes.

Notes

For a thicker consistency, mash a few potato pieces in the soup. Adding a splash of lemon juice at the end can brighten the flavors.
