Ingredients

- 2 tablespoons extra virgin olive oil
- 1 cup white onions, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- ½ lb ground turkey
- 3 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons tomato paste
- 6 cups chicken broth
- 1 cup crushed tomatoes
- 2 cups potatoes, diced
- 1 cup frozen green peas
- 1 tablespoon fresh parsley, chopped
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onions, carrots, and celery; sauté until onions are translucent, about 5 minutes.
- Stir in ground turkey, breaking it apart. Cook until browned, about 6-8 minutes.
- Add minced garlic and tomato paste; sauté for an additional minute.
- Pour in chicken broth and crushed tomatoes; add Italian seasoning and salt and pepper to taste. Stir well.
- Incorporate diced potatoes, reduce heat, and simmer for 20-25 minutes.
- Add frozen peas and chopped parsley; cook for another 5 minutes.
Notes
For a thicker consistency, mash a few potato pieces in the soup. Adding a splash of lemon juice at the end can brighten the flavors.
