- 1 teaspoon dried thyme
- 1 teaspoon dried basil

- Fresh parsley for garnish (optional)
Instructions
- Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté these vegetables until softened, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute, allowing the flavors to meld together.
- Pour in the vegetable broth and diced tomatoes. Bring the mixture to a boil.
- Stir in the mixed vegetables, dried thyme, and basil. Feel free to mix it up with your choice of vegetables.
- Reduce the heat and let the soup simmer for 20 to 25 minutes.
- Season the soup with salt and pepper to taste.
- Serve hot, garnished with fresh parsley if desired.
