Description

Delicious cookies with a buttery richness and sweet glaze, reminiscent of Kentucky butter cake.

Ingredients

Scale
  • 2 ½ cups (310 grams) all-purpose flour
  • 2 large eggs
  • 1 cup (225 grams / 8 oz) unsalted butter, softened
  • 1 cup (200 grams) granulated sugar
  • ½ cup (100 grams) powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp butter extract (optional)
  • 1 tsp baking powder
  • ¼ tsp salt
  • ½ cup (115 grams / 4 oz) unsalted butter
  • ¾ cup (150 grams) granulated sugar
  • ¼ cup (60 mL / 2 fl oz) water
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Cream the softened butter with both sugars until light and fluffy.
  3. Add the eggs, vanilla extract, and optional butter extract, mixing until combined.
  4. Fold in the flour, baking powder, and salt, mixing minimally.
  5. Roll the dough into uniform 1.5-inch spheres and flatten each into a disk.
  6. Bake in the oven for 10-12 minutes until edges are set and centers are slightly underdone.
  7. Let cookies rest on baking sheets for 5 minutes before transferring to a wire rack.
  8. Melt the butter for the glaze and stir in granulated sugar and water until dissolved.
  9. Brush or drizzle the glaze over the warm cookies and let them cool completely.

Notes

Chill the dough for at least 30 minutes for better texture. Store in an airtight container or freeze for longer storage.
