- 800 g Chicken Breast (cut into halves)
- 1.5 Tsp Cajun Seasoning Mix
- 2 Tsp Olive Oil
- 25 g Grass Fed Butter for cooking
- 1 Medium Red Onion (chopped)
- 4–5 Garlic Cloves (chopped)
- 1 Tsp Salt
- 1 Tsp Black Pepper
- 1 Tsp Garlic Powder
- 1 Tsp Onion Powder
- 1 Tsp Oregano
- 1 Tsp Thyme
- 1 Tsp Paprika
- 1 Tsp Chili Powder
- 250 ml Milk
- 150 g Light Cream Cheese
- 40 g Parmesan
- 15 g Grass Fed Butter (for creamy sauce)
- Fresh Parsley (for garnish)
Instructions
- Marinate the chicken breast pieces overnight in Cajun seasoning mix and olive oil.
- Heat a pan over medium-high heat and melt the 25 g of grass-fed butter. Add the marinated chicken and cook until golden crust forms, about 5-7 minutes on each side.
- Allow the chicken to rest for a few minutes before slicing into strips.
- In the same pan, sauté chopped red onion and garlic until fragrant, about 2-3 minutes.
- Add the remaining Cajun seasoning and cold, day-old rice, mixing well to combine flavors.
- Lower the heat, add leftover grass-fed butter, and whisk in the milk until warmed. Follow with light cream cheese and Parmesan, stirring continuously until creamy sauce forms.
- To serve, layer Cajun rice on a plate, top with sliced chicken, and drizzle creamy sauce. Garnish with fresh parsley.
Notes
Add a splash of lemon juice to the sauce for extra flavor. Adjust chili powder to taste for spiciness.
