- 1 cup cottage cheese
- 2 cups rolled oats
- 1 cup blueberries
- 2 lemons (zested and juiced)
- 3 eggs
- 1/4 cup honey or maple syrup
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease a baking dish.
- Mix together the cottage cheese, oats, blueberries, lemon zest, and lemon juice in a large bowl.
- Whisk the eggs, honey (or maple syrup), baking powder, salt, and vanilla extract until well combined in another bowl.
- Pour the egg mixture into the oat mixture and stir until everything is combined.
- Pour the batter into the prepared baking dish and spread evenly.
- Bake for 30-35 minutes, or until the top is golden and a toothpick inserted comes out clean.
- Let it cool slightly before slicing and serving.
Notes
Consider adding a pinch of cinnamon for warmth or mashing some blueberries for extra flavor. Store leftovers in the refrigerator for up to five days.
