  • 2 cups rolled oats

  • 2 lemons (zested and juiced)
  • 3 eggs
  • 1/4 cup honey or maple syrup

  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a baking dish.
  2. Mix together the cottage cheese, oats, blueberries, lemon zest, and lemon juice in a large bowl.
  3. Whisk the eggs, honey (or maple syrup), baking powder, salt, and vanilla extract until well combined in another bowl.
  4. Pour the egg mixture into the oat mixture and stir until everything is combined.
  5. Pour the batter into the prepared baking dish and spread evenly.
  6. Bake for 30-35 minutes, or until the top is golden and a toothpick inserted comes out clean.
