High Protein Stuffed Pepper Soup

Description

A hearty and nutritious soup packed with protein, featuring bell peppers, ground turkey or beef, and beans.


Ingredients

  • 4 large bell peppers, chopped
  • 1 pound ground turkey or beef (or a plant-based alternative)
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 1 cup corn (frozen or canned)
  • 4 cups low-sodium chicken or vegetable broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 1 cup quinoa or rice (optional)

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.
  2. Add the ground turkey or beef and cook until browned.
  3. Stir in the chopped bell peppers, diced tomatoes, kidney beans, corn, broth, Italian seasoning, salt, and pepper.
  4. If using quinoa or rice, add it to the mixture.
  5. Bring to a boil, then reduce heat and simmer for 30-40 minutes.
  6. Adjust seasoning to taste before serving.

Notes

For a thicker soup, mash some of the kidney beans. For a brothier soup, add extra broth as needed.
