Ingredients

- 4 large bell peppers, chopped
- 1 pound ground turkey or beef (or a plant-based alternative)
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) kidney beans, rinsed and drained
- 1 cup corn (frozen or canned)
- 4 cups low-sodium chicken or vegetable broth
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons Italian seasoning
- Salt and pepper to taste
- 1 cup quinoa or rice (optional)
Instructions
- In a large pot, sauté the onion and garlic until translucent.
- Add the ground turkey or beef and cook until browned.
- Stir in the chopped bell peppers, diced tomatoes, kidney beans, corn, broth, Italian seasoning, salt, and pepper.
- If using quinoa or rice, add it to the mixture.
- Bring to a boil, then reduce heat and simmer for 30-40 minutes.
- Adjust seasoning to taste before serving.
Notes
For a thicker soup, mash some of the kidney beans. For a brothier soup, add extra broth as needed.
