Description
A hearty hobo casserole made with layers of ground beef, tender potatoes, and melty cheese, perfect for chilly evenings.

- 1 lb ground beef
- 4–5 medium potatoes, thinly sliced
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp paprika
- Salt & pepper to taste
- 1 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/2 cup beef broth
- 1/4 cup milk (optional)
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- Slice the potatoes thinly to about 1/4 inch thick and prepare the onion and garlic for sautéing.
- In a large skillet, heat olive oil over medium heat, and sauté the onion and garlic until fragrant.
- Add ground beef and cook until browned. Season with Italian seasoning, paprika, salt, and pepper.
- Grease your baking dish and start layering with half of the sliced potatoes, followed by half of the beef mixture, and half of the cheddar cheese.
- Repeat the layers with the remaining potatoes and beef, topping with the remaining cheddar cheese.
- Pour beef broth over the layers and add milk if desired.
- Cover with foil and bake for 35-40 minutes.
- Remove foil, sprinkle Parmesan cheese on top, and bake uncovered for an additional 10 minutes until golden brown.
- Let rest for 5 minutes, garnish with parsley, and serve.
Notes
Feel free to experiment with additional vegetables or spices to enhance flavor. This casserole also stores well in the fridge for up to three days.
