Description

A nostalgic and versatile dish, hobo foil packets combine seasoned meats and fresh vegetables cooked in their own juices, perfect for campfire gatherings or busy weeknights.


Ingredients

  • 1 lb ground beef
  • 4 large potatoes, peeled and thinly sliced
  • 1 large onion, sliced
  • 2 large carrots, sliced
  • 2 bell peppers, sliced
  • 4 cloves garlic, minced
  • 4 tablespoons olive oil
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/4 cup freshly grated Parmesan cheese (optional)
  • Heavy-duty aluminum foil

Instructions

  1. Preheat your grill to medium-high heat or your oven to 400°F (200°C).
  2. In a large bowl, combine ground beef with Worcestershire sauce, salt, pepper, thyme, and paprika. Mix until evenly distributed.
  3. Divide the mixture into four equal parts.
  4. Cut four pieces of heavy-duty aluminum foil, approximately 12×18 inches each.
  5. In the center of each piece of foil, place an equal portion of sliced potatoes, onions, carrots, and bell peppers. Add one minced garlic clove to each packet.
  6. Drizzle each pile of vegetables with 1 tablespoon of olive oil and sprinkle with additional salt and pepper, to taste.
  7. Place one portion of the seasoned ground beef on top of each vegetable pile.
  8. Fold the sides of the foil over the contents, creating a sealed packet. Ensure the edges are sealed tightly to prevent leakage.
  9. If using a grill, place the packets on the grill and cook for 25-30 minutes, flipping halfway through, until vegetables are tender and beef is cooked through.
  10. If using an oven, place the packets on a baking sheet and bake for 30-35 minutes.
  11. Carefully open each packet (watch out for steam) and garnish with freshly grated Parmesan cheese, if desired.

Notes

For even cooking, layer denser vegetables at the bottom of the packet. Customize fillings based on personal preference or seasonal ingredients.
