Description

A delightful homemade ice cream cake featuring layers of moist cake and creamy ice cream, topped with glossy chocolate ganache.


Ingredients

Scale
  • 250 g self-raising flour
  • 250 g caster sugar
  • 250 g unsalted butter, softened
  • 4 medium eggs
  • 1 tsp vanilla extract
  • 1.5 litres ice cream (choose 23 flavors)
  • Optional: chocolate chips, fruit, or cookie crumbs
  • 200 ml double cream
  • 100 g dark chocolate, chopped
  • Decorations: sprinkles, nuts, or biscuit crumbs

Instructions

  1. Preheat the oven to 180°C (160°C fan).
  2. Grease two 20 cm cake tins.
  3. Cream together the softened butter and caster sugar until light and fluffy.
  4. Beat in the medium eggs, one at a time, mixing well after each addition.
  5. Add in the vanilla extract and fold in the self-raising flour gently until fully incorporated.
  6. Divide the batter evenly between the prepared tins.
  7. Bake in the oven for 25–30 minutes, or until a skewer inserted in the center comes out clean.
  8. Cool completely in the pans before transferring to a wire rack.
  9. Line each cake tin with cling film before molding the ice cream.
  10. Spread your chosen ice cream flavors into the lined cake tins, creating a uniform layer and freeze for about an hour until slightly firm.
  11. Once frozen, layer the cooled cake and ice cream carefully, alternating to create a beautiful dessert.
  12. Wrap the assembled cake and freeze for at least 2–3 hours before serving.
  13. Pour over ganache made from heating cream and stirring in the chopped dark chocolate until smooth.
  14. Slice and serve, dipped in warm water for clean cuts.

Notes

For best results, let cake layers cool to room temperature before assembling with ice cream. Store leftovers tightly wrapped in the freezer.
